Beans and Rice

Beans and Rice recipe
A crock of New Orleans style blackbeans and rice

Ingredients

1 ea 13oz can black beans, drained & rinsed
1 ea 13oz can dark kidney beans, drained & rinsed
1 tsp cumin
1 tsp black pepper
1/4 cup onion, chopped OR 1 Tbsp onion powder
1 + 1/2 cups rice (basmati, white, brown)
2 cups water
1 tsp paprika
To taste, salt & pepper
Fresh squeeze lime juice

Step by Step Instructions

Beans

Step 1
In a saucepan, on medium-high heat, add both black & kidney beans. Mix well.
Step 2
Add 1/4 cup water, cumin, onion, salt & pepper. Mix well.
Step 3
Reduce heat to medium. Cook for 25–35 mins, stirring occasionally.
Step 4
Turn off the stove & cover until ready to serve.

Rice

Step 1
In a saucepan on medium-high heat, add water & bring to boil.
Step 2
Add rice & cover.
Step 3
Reduce heat to medium-low and cook for 10–15 mins or according to package.
Step 4
Turn off the stove and let steam for 5 minutes.
Step 5
Add paprika to rice & fluff with a fork.
Add beans to rice and fold in with a fork or spoon, OR add rice & place beans on top with other toppings such as sautéed vegetables or roasted corn. Enjoy!
