Mexican Beans and Rice
This Mexican beans and rice is an easy, one-pot meal that simmers brown rice, pinto beans, tomatoes, and warm spices together until tender. It's budget-friendly and filling, at roughly $1.50 a serving — great as a main or a hearty side.

Ingredients
- 2 tablespoons cooking oil (coconut, grapeseed, or canola)
- 1 medium onion, peeled and chopped
- 2 cloves garlic, peeled and chopped
- 1 cup brown rice, pre-soaked and rinsed
- 1 (12 oz) can diced tomatoes
- 2 teaspoons paprika, ground
- 1 teaspoon cumin, ground
- 1 (14 oz) can pinto beans, rinsed and drained
- 1 cup vegetable broth
- Salt and pepper, to taste
Step-by-Step Instructions
- Step 1 In a cooking pot over medium heat, add the oil. Add the onion and a dash of salt, and sauté for 3–5 minutes, or until translucent.
- Step 2 Reduce the heat to low, add the garlic, and sauté for another 3 minutes, or until translucent.
- Step 3 Add the remaining ingredients. Cover with a lid and simmer for 25–30 minutes, or until the rice is tender.
- Step 4 Turn off the stove and enjoy!
