Watercress Salad with Citrus Dressing
This watercress salad pairs peppery greens with cucumber, red pepper, and herbs, all tossed in a bright citrus dressing of lime, orange, and garlic. It's a light, healthy side that comes together in just a few minutes.

You Will Need
- Large bowl
- Spoon
- Glass jar with a lid (for the dressing)
Ingredients
- 3/4 package watercress
- 1 cucumber
- 1-inch top portion of raw red pepper, julienne sliced
- 1/4 bunch scallions, chopped
- 1/4 bunch cilantro, chopped
- 1 tablespoon olive oil
- 1 tablespoon freshly squeezed lime juice
- 2 tablespoons freshly squeezed orange juice
- 1 garlic clove, mashed into a paste
- Salt and pepper, to taste
Step-by-Step Instructions
- Step 1 Rinse the vegetables in cold water and pat dry.
- Step 2 Combine the olive oil, lime and orange juice, mashed garlic, salt, and pepper in a glass jar with a lid, and shake to make the citrus dressing.
- Step 3 Combine all the vegetables in a bowl and toss with the citrus dressing. Serve immediately, or store in a covered container in the refrigerator for up to 1 day. Enjoy!
