Watercress Salad with Citrus Dressing

This watercress salad pairs peppery greens with cucumber, red pepper, and herbs, all tossed in a bright citrus dressing of lime, orange, and garlic. It's a light, healthy side that comes together in just a few minutes.

You Will Need

  • Large bowl
  • Spoon
  • Glass jar with a lid (for the dressing)

Ingredients

  • 3/4 package watercress
  • 1 cucumber
  • 1-inch top portion of raw red pepper, julienne sliced
  • 1/4 bunch scallions, chopped
  • 1/4 bunch cilantro, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon freshly squeezed lime juice
  • 2 tablespoons freshly squeezed orange juice
  • 1 garlic clove, mashed into a paste
  • Salt and pepper, to taste

Step-by-Step Instructions

  1. Step 1 Rinse the vegetables in cold water and pat dry.
  2. Step 2 Combine the olive oil, lime and orange juice, mashed garlic, salt, and pepper in a glass jar with a lid, and shake to make the citrus dressing.
  3. Step 3 Combine all the vegetables in a bowl and toss with the citrus dressing. Serve immediately, or store in a covered container in the refrigerator for up to 1 day. Enjoy!

LARGE BOWL
SPOON

3/4 package of watercress
1 cucumber
1" top portion of raw red pepper (julienne sliced)
1/4 bunch scallions, chopped
1/4 bunch cilantro, chopped
1 Tbsp olive oil
1 Tbsp freshly squeezed lime juice
2 Tbsp freshly squeezed orange juice
1 garlic clove, mashed into a paste
Salt & pepper to taste

Step by Step Instructions

Step 1

Combine olive oil, freshly squeezed juices, mashed garlic clove, salt & pepper in a glass jar with a plastic lid, and shake to combine the citrus dressing.

Step 3

Combine all the vegetables in a bowl and toss with citrus dressing. Store in a covered container in the refrigerator for up to 1 day. Serve immediately & enjoy!
